Grill Americano Sydney

We were engaged by Chris Lucas’s Lucas Collective to bring Melbourne’s celebrated Grill Americano to the heart of Sydney’s CBD, transforming a long-vacant heritage tenancy at 1 Chifley into a high-energy, glamorous dining destination.  

Building on our trusted relationship and previous success delivering many hospitality spaces nationally for Lucas Collective, including the original Grill Americano in Melbourne, we were engaged to realise the brand’s expansion with absolute precision. 

The client’s vision was clear: create a sophisticated Venetian steakhouse that mirrored the glossy elegance of its Melbourne counterpart, while elevating the guest experience for a larger, 240-seat venue complete with two private dining rooms, an oyster bar and a dedicated wine bar.  

To achieve this shared vision and take on any lessons learned, our Sydney delivery team met with the Lucas Collective team at Grill Americano in Melbourne, studying workflow, finishes and service expectations, to ensure every detail in Sydney met the standard the brand is known for. 

The heritage character of 1 Chifley shaped both the opportunity and the complexity of the build. With no loading dock, restricted access and ageing infrastructure, the project demanded meticulous planning and innovative solutions.  

Every element of the fitout is bespoke. From the ribbed lightbox that curves around the bar, to the cerulean blue leather upholstery and handcrafted joinery, each detail underwent prototyping and refinement to achieve the exacting quality expected of the Lucas Collective brand. The result is a richly layered, high-traffic, high-use space designed to perform flawlessly for guests every day. 

This project is a standout hospitality outcome and a continuation of a collaborative partnership.
